Vegan Very Berry Baked Oatmeal

Baked oatmeal is a family favorite, my husband had never heard of baked oatmeal and now he is asking for it every week. And with summer in the air berries are the way to go. Plump juices berries of any kind, you can’t make a bad choice. I like mixed berries and I’m using frozen her because it’s easier and they are picked at the peak of freshness and then frozen. Frozen berries are usually cheaper and in the winter and with costs going up, I like to things budget friendly.

Since this is a vegan recipe, we are not using eggs, we are replaces them with chia seeds and upping the Omega 3 fatty acid and they contain antioxidants, minerals and fiber. I like to use both old fashioned rolled oats and quick cooking oats because it gives this baked oatmeal a tender and the old fashioned rolled oats gives it more of a chew. Feel free to use just old fashioned rolled oats. Oats are a good source of high quality protein, manganese, iron, folate and B vitamins.

  • Preheat oven to 350 degrees F.
  • In your casserole dish or baking pan, mash the banana well.
  • Add in the remaining ingredients except for the berries. Combine everything well.
  • Add in the frozen berries and mix well.
  • Bake for 25 minutes until lightly brown.
  • If you are using a large dish you may need to cook for less time.
