Ingredients
  

  • 3 large carrots, grated
  • ¼ large green cabbage, grated
  • ¼ large purple cabbage, grated
  • ½ cup Apple cider vinegar
  • ½ white or purple onion, sliced finely
  • 2 tbsp maple syrup or agava
  • 2 tsp Dijon mustard more if you prefer
  • 2 tbsp sunflower seeds (optional)
  • 1 tsp celery seed (optional)

Instructions
 

  • In your food processor or with box grater, grate the carrots and cabbage.
  • Add carrots and cabbage to a large bowl.
  • In a small bowl, mix remaining ingredients to make the vinaigrette.
  • Toss the vinaigrette with the grated vegetables to combine. Refrigerate for a few hours.
  • Stores well in the fridge for several days and gets better and better
