Ingredients
  

  • 1 medium white/red onion, chopped
  • 2-3 cloves garlic, minced
  • 4 cups cold cooked rice
  • 1 rib celery, sliced
  • ½ small carrot, diced
  • 1-2 tbsp curry powder
  • 3-4 tbps tamari or soy sauce
  • 1 cup frozen peas, thawed

Instructions
 

  • Heat large pan to medium high heat. Add a splash of water and saute onion, celery and carrots. Continue to add water to saute until they start to soften about 5 minutes.
  • Add garlic and stir for 2 minutes. Add another splash of water and add the curry powder and saute to bloom the spice for about 1 minutes
  • Add the rice and tamari and combine well. Cook for 3 minutes and add the thawed peas. Serve
