Ingredients
  

  • 1 cup old fashion rolled oats
  • cup plant based milk (soy, almond or oat)
  • 1 ripe banana
  • 2 tbsp pure maple syrup
  • ½ tsp cinnamon
  • tsp ground ginger
  • tsp ground clove
  • pinch of nutmeg
  • ½ tsp baking soda
  • ½ cup grated carrots

Instructions
 

  • Preheat your oven to 350 degrees F (180C)
  • In you blender add all ingredients except the grated carrot.
  • Blend on high until smooth. Add the grated carrot and pulse once to combine.
  • Pour into your ramekins. Bake for 25 minutes until a toothpick comes out clean.
  • Allow to cool for 5-10 minutes and add any toppings you make one, like whip cream, vegan vanilla ice cream and I think they are delicious just as they are.
  • You can triple this recipe if you want to make a large 9 x 13 " pan
