Vegan Carrot Cake Baked Oatmeal

- 1 cup old fashion rolled oats
- ⅔ cup plant based milk (soy, almond or oat)
- 1 ripe banana
- 2 tbsp pure maple syrup
- ½ tsp cinnamon
- ⅛ tsp ground ginger
- ⅛ tsp ground clove
- pinch of nutmeg
- ½ tsp baking soda
- ½ cup grated carrots
Preheat your oven to 350 degrees F (180C)
In you blender add all ingredients except the grated carrot.
Blend on high until smooth. Add the grated carrot and pulse once to combine.
Pour into your ramekins. Bake for 25 minutes until a toothpick comes out clean.
Allow to cool for 5-10 minutes and add any toppings you make one, like whip cream, vegan vanilla ice cream and I think they are delicious just as they are.
You can triple this recipe if you want to make a large 9 x 13 " pan
