- 1 cup "No Beef" broth
- 2 cups plant based milk
- 2 garlic, minced
- ½ cup onions, diced
- 2 tsp thyme
- 1 tsp salt
- ½ tsp ground black pepper
- 1 tsp turmeric (optional)
Instructions
- Heat a large pot to medium high. Add in the onions and saute for 3-4 minutes, then add the garlic and cook for 1 more minute. Add the mushrooms and allow to cook down for 4-5 minutes.
- Add in the "no beef" broth or vegetable broth, plant based milk and remaining spices.
- Allow to simmer for 10 minutes and serve. If you want a thicker soup you can add 2 tbsp of cornstarch with 4 tbsp of water to form a slurry and add to the soup and allow to simmer for 3-4 minutes.
