Heat a large pot to medium high. Add in the onions and saute for 3-4 minutes, then add the garlic and cook for 1 more minute. Add the mushrooms and allow to cook down for 4-5 minutes.
Add in the "no beef" broth or vegetable broth, plant based milk and remaining spices.
Allow to simmer for 10 minutes and serve. If you want a thicker soup you can add 2 tbsp of cornstarch with 4 tbsp of water to form a slurry and add to the soup and allow to simmer for 3-4 minutes.
