Ingredients
  

  • ½ onion, diced
  • 2 ribs celery, diced
  • 2 clove garlic, minced
  • 6-8 cups vegetable stock
  • 2 bay leaves
  • 1 8 oz. can tomato sauce or diced tomatoes
  • 2 tsp chili lime seasoning
  • 2 potatoes, cubed
  • 1 cup cabbaged chopped
  • 1 cup black beans
  • 1.5 cups frozen peas and carrots
  • Use any vegetables from your fridge or freezer
  • Salt and Pepper to taste

Instructions
 

  • In dutch oven, preheat to medium high. Using either water or vegetable broth, saute the onions and celery for 5 minutes. Add minced garlic and cook for an addition 1 minute.
  • Add in the broth, bay leaves, bring to a simmer for 10 minutes.
  • Add in potatoes(of any kind) no potatoes, you could add rice, quinoa or pasta.
  • Add in the remaining ingredients and allow to simmer for additional 10 minutes.
    Add the frozen vegetables at the end. Turn off the heat.
  • Taste and adjust seasoning. Don't have chili lime, use whatever seasoning you have or in the mood for.
  • I like to serve with crisp tortillas on top and cilantro.
  • This recipe makes a large batch and perfect budget friendly recipe. Just use what you have in your fridge, freezer and pantry.
