Chocolate Mocha Oatmeal

It sounds and looks like dessert but it’s actually healthy! It’s Starch Solution friendly, Oil Free, Gluten Free, Plant Based and delicious. The addition of the coffee, although a small amount intensifies the chocolate. This is a quick and simple breakfast but just top with some banana, peanut butter, nuts or just use your imagination. If your making this for the children, leave the instant coffee out, it will be just as delicious and they will think it’s dessert and not a healthy breakfast.

Ingredients
  

  • 1 cup Old fashion oats
  • 2 cups unsweetened plant milk
  • cup cocoa powder or cocao powder
  • 2 tsp instant coffee granules
  • ¼ cup dair free dark chocolate chunks or chips
  • 2 tbsp maple syrup
  • pinch salt

Additional Toppings

  • Banana
  • Chocolate Chunks
  • Coconut Yogurt
  • Hazelnut butter or Nut Butter
  • Roasted Nuts

Instructions
 

  • In a sauce pan, combine the oatmeal, plant based milk, cocoa powder, instant coffee and half of the chocolate chips or chunks
  • Bring to a gentle boil and reduce heat and simmer for 5 minutes, remove from heat and add the maple syrup and add toppings and enjoy.
