Vegan Oil Free Tzatziki Sauce

This is not your typically Tzatziki sauce because it’s not made from yogurt but in order to make it oil free and dairy free we are making ours with tofu, but you will never notice the difference. This tzatziki is smooth and creamy and full of authentic Greek flavors. This Starch Solution version is a light, tangy and refreshing oil free version that’s perfect to top my falafels or to use as a dip with some vegan naan or veggies.

This recipes literally comes together in a few minutes but you’ll want to make it ahead so the flavors can meld together. You can also thin this out and it makes an amazing dressing on top of any salad. I make this sauce all the time because it has multiply uses as a dip or dressing and sauce.

  • Cucumbers-I prefer either english or persian cucumber and you want to make sure you squeeze out as much water as possible.
  • Firm Silken tofu- you will want to use the shelf stable tofu here instead of fresh. It makes a difference in the taste.
  • Dill- fresh is always preferably but dry works well in this, so here is no excuse.
  • Lemons add the brightness and balance to this sauce

Amazing Vegan Tzatziki Sauce

Ingredients
  

  • 12.3 oz extra firm silken tofu
  • 2 tbsp water
  • 3 cloves, garlic
  • 1 tbsp lemon juice
  • 2 tsp apple cider vinegar
  • 2 tsp dry dill or 3 tbsp fresh dill or to taste
  • ½ english cucumber, grated and squeezed dry
  • salt and pepper to taste

Instructions
 

  • Drain tofu into a strainer and put aside.
  • Using a box grater, grate cucumber on the larger hole. Then put into a cheesecloth or milk nut and squeeze out excess liquid.
  • In a blender or food processor, add the remaining ingredients, tofu, water, garlic, lemon juice, vinegar, dill, blend. Now add the cucumber and combine.
  • Put in container and chill. This will thicken as it chills.
