Ingredients
  

  • 12.3 oz extra firm silken tofu
  • 2 tbsp water
  • 3 cloves, garlic
  • 1 tbsp lemon juice
  • 2 tsp apple cider vinegar
  • 2 tsp dry dill or 3 tbsp fresh dill or to taste
  • ½ english cucumber, grated and squeezed dry
  • salt and pepper to taste

Instructions
 

  • Drain tofu into a strainer and put aside.
  • Using a box grater, grate cucumber on the larger hole. Then put into a cheesecloth or milk nut and squeeze out excess liquid.
  • In a blender or food processor, add the remaining ingredients, tofu, water, garlic, lemon juice, vinegar, dill, blend. Now add the cucumber and combine.
  • Put in container and chill. This will thicken as it chills.
