Eggless Egg Salad/Tofu Egg salad

- 1 bowl
Ingredients
- 1 pkg firm tofu -medium if you want softer texture
- ¼ cup vegan mayo
- 3 tbsp onions, diced
- ¼ cup celery, diced
- 2 tsp yellow mustard
- ¼ tsp turmeric
- 1 tsp dry dill
- 1 tsp black salt(kala namak) (optional)
- 1 tbsp chopped dill pickle or capers(optional)
Instructions
- Drain Tofu, and press to remove some of the excess liquid about 5 minutes.
- Chop or crumble your tofu into a bowl. I like doing half chopped in blocks and half crumbled for the best texture.
- Add the remaining ingredients and combine well. Adjust your seasoning and add salt and pepper.
- To make your sandwich use your favorite bread. I really like a fluffy white bread for this because it is nostalgic for me.
