Vegan Baked Beans

Baked beans are a staple in every home or at least they should be! Beans provide protein, folate, antioxidants, fibre and a great source of iron. They can help reduce cholesterol and decrease blood sugar levels an increase healthy gut bacteria. You should be incorporating beans into your diet everyday and this recipe will help you do just that. It’s easy to make either in the slow cooker, pressure cooker or stove top.

I’m from Canada and back home we just ate baked beans as a side with our meals or as a meal. When I moved to the United States, I discovered that baked beans is a popular side dish at barbeques.

Beans are not only nutritious but they are economical too! They cost pennies to make and they amount of protein, fibre and iron you get is incredible. This recipe is on regular rotation in my kitchen.

Equipment

Ingredients
  

  • 1 lbs navy beans, soaked over night
  • 1 small onion, chopped
  • ¼ cup ketchup or tomato sauce
  • cup blackstrap molasses or brown sugar
  • ¼ cup BBQ sauce
  • 1 tsp smoked paprika
  • salt and pepper to taste
  • 2 ½ cups water

Instructions
 

  • Add all ingredients in slow cooker and set to cook for 8 hours on low or 4-6 hours on high. Stir occasionally. Adjust seasoning at the end.
