Spinach Triangles

Spinach Triangles

Ingredients
  

  • 1 pkg phyllo dough(defrost as per directions)
  • 1 pkg frozen spinach, thawed and excess water removed
  • 1 white onion, diced
  • 2 garlic cloves, minced
  • ½ cup vegan feta
  • 1 tsp vegetable or No Chicken bouillon powder
  • ½ cup warm water

Instructions
 

  • Preheat oven or air fryer to 400 degrees F.
  • Heat fry pan and add some water, then add onions and water saute until they start to become translucent, then add the garlic and continue to water saute, adding a tablespoon of water at a time as needed. Once cooked, remove from heat and let cool.
  • In a bowl, mix the onion mixture, spinach and feta.
  • In a cup mix the warm water with the bouillon to dissolve. If you are not oil free you can use melted vegan butter if you prefer.
  • Open the phyllo dough, using a damp towel cove the dough each time to keep the dough from drying out.
  • Take one sheet of phyllo, I cut mine in half, spread half with the bouillon or butter and fold over and brush again with bouillon or butter. Take a tablespoon of the spinach mixture and put at the top the row, fold to start a triangle and continue to fold to continue to make triangles. Continue until all your filling is used.
  • Place on a baking sheet. Bake at 400 degrees for 15-20 mins until brown. If using air fryer cook until brown about 8 minutes
