Ingredients
  

  • cup unsweetened plant-based milk
  • ½ cup applesauce(banana or pumpkin puree can be substituted)
  • 1 tbsp ground flax seed
  • ½ cup sucanat, date sugar or maple sugar
  • 2 tsp pure vanilla extract
  • 1 ½ cups all purpose flour, gluten 1-1 blend or oat flour
  • 1 tsp lemon zest
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 2 tsp ground cinnamon
  • ½ tsp ground allspice
  • 1 cup grated zucchini(about 1 medium zucchini)
  • cup chopped walnuts or pecans
  • ¼ cup rainsin(optional)
  • 1 tsp salt(optional)

Instructions
 

  • Preheat oven to 350 degrees F. Line an 8 x 4 inch non stick or silicone baking pan.
  • In a large mixing bowl, combine the plant-based milk, applesauce, flaxseed and sweetener. Using handheld electric mixer, beat until creamy and smooth. Add vanilla and lemon zest.
  • In a separate bowl, sift the flour, baking soda, baking powder, salt and spices. Mix the dry ingredients with the wet ingredient and combine until well incorporated.
  • Fold in the zucchini, walnuts and raisins(if using). Pour batter into prepared loaf pan. Bake for 60-70 minutes or until the top is very firm and a toothpick comes out dry.
  • Remove from oven and allow to cool for 10 minutes in pan and then remove from pan and allow to completely cooled before slicing and enjoying.
