Preheat oven to 350 degrees F. Line an 8 x 4 inch non stick or silicone baking pan.
In a large mixing bowl, combine the plant-based milk, applesauce, flaxseed and sweetener. Using handheld electric mixer, beat until creamy and smooth. Add vanilla and lemon zest.
In a separate bowl, sift the flour, baking soda, baking powder, salt and spices. Mix the dry ingredients with the wet ingredient and combine until well incorporated.
Fold in the zucchini, walnuts and raisins(if using). Pour batter into prepared loaf pan. Bake for 60-70 minutes or until the top is very firm and a toothpick comes out dry.
Remove from oven and allow to cool for 10 minutes in pan and then remove from pan and allow to completely cooled before slicing and enjoying.
