The Power of Simple Whole Ingredients
Each ingredient in this recipe contributes both flavor and nutrition.
Rice
Rice provides the hearty base of this dish and is one of the most affordable pantry staples available. It’s a great source of complex carbohydrates, which provide steady energy throughout the day.
Rice is also naturally gluten-free, easy to digest, and incredibly versatile. When paired with beans, it forms a complete plant protein, meaning it contains all the essential amino acids your body needs.
Black Beans
Black beans add richness, texture, and a generous boost of plant-based protein. They are loaded with fiber, which supports digestion and helps keep you feeling full longer.
They are also rich in iron, magnesium, folate, and antioxidants, making them a powerful addition to any meal.
Best of all, canned or dried beans are incredibly inexpensive, making them perfect for budget-friendly cooking.
Diced Tomatoes
Canned diced tomatoes bring brightness and moisture to the dish while adding important nutrients like vitamin C and lycopene. Lycopene is a powerful antioxidant linked to heart health.
They also help create the savory base of the dish as everything bakes together.
Vegetable Broth
Vegetable broth helps cook the rice while infusing the entire dish with flavor. Using broth instead of plain water makes the meal more savory and satisfying.
Homemade vegetable broth made from kitchen scraps is also a great way to reduce food waste and save money.
Frozen Corn
Frozen corn adds a touch of natural sweetness and color while boosting the nutritional value of the meal.
Corn provides fiber, B vitamins, and antioxidants, and frozen vegetables are often just as nutritious as fresh ones while being more convenient and affordable.
Flavorful Spices That Transform the Dish
This recipe uses a few simple spices that give the rice and beans their classic Mexican-inspired flavor.
Chili Powder
Chili powder adds warmth and depth to the dish while bringing a mild heat that complements the beans and tomatoes.
Cumin
Cumin has an earthy, slightly smoky flavor that pairs beautifully with rice and beans. It’s a staple spice in many Latin American dishes.
Smoked Paprika
Smoked paprika adds a subtle smoky richness that makes the dish taste like it simmered for hour.
Garlic
Garlic brings bold savory flavor while also providing beneficial compounds that support immune health.
Oregano
Oregano adds an herbal note that balances the spices and rounds out the flavor of the dish.
A True One-Dish Wonder
One of the best things about this recipe is how incredibly easy it is to make.
All you need to do is:
- Combine the rice, beans, tomatoes, broth, vegetables, and spices in a baking dish.
- Stir everything together.
