  • 1 small onion, diced
  • 2 ribs celery, diced
  • 1 large carrot, diced
  • 4 cloves garlic, minced

  • 3 cups water
  • 1 tbsp lemon zest
  • ¼ cup lemon juice
  • 1 cup orzo
  • 1 ½ cups chickpeas (one can, or 1.5 cups)
  • 2 bay leaves
  • 2 tsp dried thyme
  • 2 tsp dried rosemary or 1 sprig of fresh
  • ¼ cup fresh parsley, chopped
  • Salt and Pepper

Instructions
