Ingredients
  

  • 1 small onion, diced
  • 2 ribs celery, diced
  • 1 large carrot, diced
  • 4 cloves garlic, minced
  • 4 cups Vegetable Stock https://vicki-lynne.com/easy-cheap-vegetable-stock/
  • 3 cups water
  • 1 tbsp lemon zest
  • ¼ cup lemon juice
  • 1 cup orzo
  • 1 ½ cups chickpeas (one can, or 1.5 cups)
  • 2 bay leaves
  • 2 tsp dried thyme
  • 2 tsp dried rosemary or 1 sprig of fresh
  • ¼ cup fresh parsley, chopped
  • Salt and Pepper

Instructions
 

  • Heat dutch oven to medium high. Add a splash of water for sauteing. Add the onion, carrots and celery and allow to cook for about 8 minutes to become soft.
  • Add the garlic and cook for 1 minute. Add in the remaining ingredients except the parsley. Bring to a boil and simmer for 20 minutes.
  • Remove from heat, add in the parsley and fresh ground pepper.
