- 6 cups vegetable broth
- ½ onion, diced
- 2 ribs celery, diced
- 1 large carrot, diced
- ½ cup orzo
- 2 cups kale or spinach
- 2 potatoes, chopped
- 1 zucchini, chopped
- 1 cup cooked lentils
- 2 tsp granulated garlic
- 2 tsp thyme
- 1 tsp turmeric
- 1 tsp ground black pepper
Instructions
- Preheat the dutch oven on medium high. Add onions and saute for 3 minutes.
- Add the zucchini, carrots, celery and saute for another 5 minutes. Add potatoes and stock. Bring to a simmer, cover and cook for 15 minutes until all the vegetables are tender.
- Add orzo, spices and kale and allow to cook for 7 minutes.
- I like to squeeze fresh lemon before serving to add brightness. Feel free to add any additional vegetables you may have in your fridge.
