Healthy Vegan Clam Chowder

- 1 cup yellow potatoes, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 3 garlic cloves, minced
- 3 bay leaves
- 1 tsp white miso
- 3 cups vegetable stock

Slurry if you want to make thicker
- 1 tbsp tbsp cornstarch
- 3 tbsp water
Instructions
- In a large pot, add a splash of water and your onions, celery and potatoes. Cook for 5 minutes until soften. Add garlic and saute for another minute.
