GF Lemon Blueberry Cookies

- 1 bowl
Ingredients
- 1.5 cups almond flour
- 1.5 cups rolled oats
- ¼ cup maple syrup
- ½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt(optional)
- ½ cup orange marmalade
- ¼ cup maple syrup
- 2 tsp lemon zest
- 1 cup dried blueberries
Instructions
- Preheat the oven to 350 F. Place rack in the middle position.
- Line a baking sheet with a silicone mat or parchment paper.
- Place rolled oats in the food processor and process for 45 seconds, for fine pieces not flour.
- Add the oats and the remaining dry ingredients into a bowl and whisk to combine.
- Add all wet ingredients to the dry and stir well to combine. Stir in dried blueberries and lemon zest until well combined.
- Scoop the dough and roll them into a ball in your hands and then gentle press down depending how you like your cookies. If you want chewy, keep them thick and if you want crispy press thinner.
- Bake them for 15-18 minutes. Remove the cookies from the oven and allow cookies to sit for 4 minutes until they firm up and then Enjoy!!
