  • Preheat the oven to 350 F. Place rack in the middle position.
  • Line a baking sheet with a silicone mat or parchment paper.
  • Place rolled oats in the food processor and process for 45 seconds, for fine pieces not flour.
  • Add the oats and the remaining dry ingredients into a bowl and whisk to combine.
  • Add all wet ingredients to the dry and stir well to combine. Stir in dried blueberries and lemon zest until well combined.
  • Scoop the dough and roll them into a ball in your hands and then gentle press down depending how you like your cookies. If you want chewy, keep them thick and if you want crispy press thinner.
  • Bake them for 15-18 minutes. Remove the cookies from the oven and allow cookies to sit for 4 minutes until they firm up and then Enjoy!!
