Decadent Chocolate Brownie Baked Oatmeal – Guilt-Free, Oil-Free & Delicious!

Ingredients
  

  • 1 tbsp ground flax seed and + 3 tbsp water for flax egg
  • 1 cup ripe mashed bananas(2-3 depending on size
  • cup cocoa powder
  • ¼ cup nut butter or seed butter
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¾ tsp cinnamon
  • 2 cups non-dairy milk
  • 1.5 cups quick oats
  • 1.5 cup rolled oats
  • ½ tsp salt(optional)
  • ¼ cup vegan mini chocolate chips(optional)

Instructions
 

  • Preheat oven to 350 degrees F. Prepare you baking dish with a spray of non stick spray or parchment paper. I don't find my dish sticks so I don't grease it.
  • In a small bowl, make your flax egg was mixing 1 tbsp of ground flax seed with 3 tablespoons of water and sent aside for 5-10 minutes.
  • To a large bowl, add the bananas and mash them(the riper the better) add cocoa, nut butter, maple syrup, vanilla, baking powder, cinnamon and salt.
  • Add in the non dairy milk and combine well. Add in the oats and continue to mix. Transfer mixture to your prepared pan. Sprinkle with chocolate chips if using.
  • Bake in the oven for 25-30 minutes. If you are using a smaller or larger baking dish you may have to adjust the time.
  • I love having this for breakfast or dessert. Top with a drizzle of peanut butter or chocolate sauce and fruit!!
