The Perfect Chocolate-Coffee Treat for Breakfast, Snack or Dessert

Sometimes you want something that feels decadent and indulgent without turning your healthy eating goals upside down. Thatโs exactly where this Espresso Chia Pudding comes in!
Itโs creamy, chocolatey, has a delicious coffee flavor, and feels much more like a dessert than a โhealthyโ recipe. But underneath all that indulgence are some seriously nutritious ingredients.
And yesโฆthis one is for the adults! โ๐ซ
Think of it as a little coffeehouse-inspired dessert that you can keep in the refrigerator and enjoy throughout the week.
I love making a big batch because it works for practically any time of day:
- โ๏ธ Breakfast
- ๐ฅ Brunch
- โ Afternoon snack
- ๐ซ Dessert
- ๐ An after-dinner treat
And if you’re working toward weight loss, this can be a great option because chia seeds provide a substantial amount of fiber, which can help promote fullness and satiety.
Why I Love This Espresso Chia Pudding
One of the biggest things I appreciate about this recipe is that it satisfies that craving for something rich and chocolatey without relying on heavy cream, butter, or lots of added fat.
The combination of chia seeds and yogurt creates a thick, creamy pudding while cocoa and espresso give it that intense chocolate-coffee flavor.
You can also turn this into a high-protein chia pudding by adding your favorite vanilla plant-based protein powder.
I use Orgain Organic Vegan Vanilla Protein Powder, but you can use whatever vanilla protein powder you enjoy.
And here’s another little secret:
You don’t need an espresso machine!
You can use brewed espresso, strong coffee, decaf coffee, or even instant coffee in a pinch.
Ingredients & Their Benefits
โ Coffee or Espresso
Coffee gives this pudding its unmistakable espresso flavor.
You can use:
- Espresso
- Strong brewed coffee
- Regular coffee
- Decaf coffee
- Instant coffee
If you’re sensitive to caffeine or want to enjoy this dessert later in the evening, decaf works beautifully.
Coffee contains naturally occurring compounds such as polyphenols and antioxidants. Of course, everyone’s caffeine tolerance is different, so choose regular or decaf based on what works best for you.
No espresso machine?
No problem!
Mix a little instant coffee with water and let it cool before adding it to the pudding.
Instant coffee to the rescue!
๐ฑ Chia Seeds
Chia seeds are the nutritional powerhouse of this recipe.
They’re especially well known for their fiber content.
Fiber can help you feel fuller for longer, which is one reason chia pudding can be such a satisfying addition to a weight-management eating pattern.
Chia seeds also provide:
- Plant-based omega-3 fatty acids
- Protein
- Calcium
- Magnesium
- Manganese
- Phosphorus
- Fiber
When chia seeds absorb liquid, they develop that characteristic gel-like texture that turns our coffee mixture into a thick, creamy pudding.
And that fiber is one of the reasons I love using chia pudding when I’m trying to stay satisfied between meals.
One important point: chia seeds are fiber-rich, but adding more isn’t necessarily better. If you’re not accustomed to eating much fiber, increase your intake gradually and drink adequate fluids.
๐ฅฃ Greek-Style Vegan Yogurt
For this recipe, I like using Kite Hill Greek-Style Yogurt.
The yogurt gives the pudding a creamy, rich texture and adds protein, depending on the variety you choose.
It also makes the chia pudding feel much more like a real dessert rather than something you’re eating because it’s โhealthy.โ
Look for a Greek-style plant-based yogurt that works with your dietary preferences and check the nutrition label for protein and added sugar.
๐ช Vegan Vanilla Protein Powder
Want to make this a high-protein espresso chia pudding?
Add vanilla plant-based protein powder.
I use Orgain Organic Vegan Vanilla Protein Powder.
Adding protein can make this pudding even more satisfying and can help turn it from a little dessert into a more substantial breakfast or snack.
Protein is also important for maintaining muscle, particularly when you’re working toward weight loss.
The vanilla flavor also pairs beautifully with the coffee and chocolate.
๐ซ Cocoa Powder
Unsweetened cocoa powder gives this pudding its deep chocolate flavor without requiring a chocolate bar or a lot of added sugar.
Cocoa naturally contains polyphenols and minerals including:
- Magnesium
- Iron
- Copper
- Manganese
Plus, let’s be honest…
Chocolate + espresso = a match made in heaven.
๐ Maple Syrup
A little maple syrup provides sweetness and rounds out the bitterness of the coffee and cocoa.
You can adjust the amount depending on how sweet you like your pudding and whether your protein powder or yogurt is already sweetened.
Remember, maple syrup is still an added sugar, so a little goes a long way.
Why This Can Be a Great Weight-Loss Dessert
Let’s talk about the important part:
Can you eat dessert while trying to lose weight?
Absolutely.
Weight loss doesn’t require eliminating every food that tastes indulgent.
What matters is the overall eating pattern and energy balance over time.
This chia pudding has several characteristics that can make it particularly satisfying:
โ๏ธ High in fiber
The chia seeds provide substantial dietary fiber, which can help with satiety.
โ๏ธ Protein option
Adding vegan protein powder and using a higher-protein yogurt can increase the protein content and make the pudding more filling.
โ๏ธ Portion-friendly
You can make individual containers so you already have a serving ready when the chocolate craving hits.
โ๏ธ Meal-prep friendly
Make it once and have several portions ready to go.
โ๏ธ Dessert that actually satisfies
Instead of eating several different snacks because you’re still looking for something sweet, a rich chocolate-coffee pudding can give you that satisfying dessert experience.
Of course, no individual food causes weight loss. The pudding can fit into a weight-loss diet when your overall intake supports your goals.
Make a Big Batch for Meal Prep
This is one of my favorite recipes to make ahead.
Prepare a large batch, portion it into individual containers, and keep them refrigerated.
Now you have something ready whenever you need:
Breakfast โ grab it.
Brunch โ grab it.
Afternoon snack โ grab it.
Dessert โ grab it.
No cooking required!
The pudding will continue to thicken as the chia seeds absorb the liquid, so give it plenty of time to set.
If the pudding becomes thicker than you prefer, simply stir in a little more coffee or plant milk until you reach your desired consistency.
Adult-Only Dessert โ๐ซ
And now for the disclaimer…
THIS IS AN ADULT-ONLY DESSERT!
Okay, maybe not literallyโbut if you’re using caffeinated espresso or coffee, you’ll want to consider the caffeine content, especially for children.
And personally, I think the whole espresso + dark chocolate + creamy chia pudding combination deserves an adult dessert designation anyway. ๐
For an evening treat, use decaf coffee or espresso if you’d rather skip the caffeine.
Easy Variations
Once you have the basic recipe down, you can customize it.
โ Mocha Chia Pudding
Add a little extra cocoa for an even stronger chocolate flavor.
๐ Chocolate Banana
Add sliced banana before serving.
๐ฅ Chocolate Almond
Top with a few chopped almonds.
๐ซ Extra Chocolate
Add a few cacao nibs for crunch.
โ Decaf Dessert
Use decaf espresso or coffee for a nighttime treat.
๐ช High-Protein Version
Espresso Chia Pudding for the Win!
This is exactly the kind of recipe I love having in my refrigerator.
It’s simple, creamy, chocolatey, coffee-infused and satisfying, but it’s also made with ingredients that can contribute fiber, protein, healthy fats, vitamins and minerals to your diet.
And because you can make a large batch, it’s a fantastic meal-prep recipe.
Healthy eating doesn’t have to mean giving up the foods and flavors you love.
Sometimes it’s about finding a way to make those indulgent cravings work within your overall healthy lifestyle.
So grab your coffee, cocoa, chia seeds and yogurt…
Because dessert is officially on the meal-prep menu! โ๐ซ your favorite vanilla vegan protein powder.
