I like to bake my sweet potatoes, then let them cool and mash them. You can also boil or microwave your sweet potato if that’s more convenient.
Sweet potatoes are an excellent source of beta-carotene, which your body can convert into vitamin A. Vitamin A is important for normal vision, immune function, and healthy skin.
They also provide:
- Fiber
- Potassium
- Vitamin C
- Vitamin B6
- Manganese
The natural sweetness and moisture from sweet potato are perfect for baking without added oil.
Tip: If you have leftover cooked sweet potatoes in your refrigerator, this is a fantastic way to use them up!
🌾 All-Purpose Flour or Gluten-Free 1-to-1 Flour
You can use regular all-purpose flour, or substitute a gluten-free 1-to-1 baking blend if you need your muffins to be gluten-free.
Flour provides carbohydrates, which are your body’s primary fuel source. Depending on the flour blend you choose, the nutritional profile can vary considerably.
For a gluten-free version, look for a blend specifically designed as a 1-to-1 replacement for wheat flour and check the package ingredients and instructions.
🌴 Date Sugar, Maple Sugar or Date Paste

Remember, though, that dates and date paste are still concentrated sources of sugar, so portion size still matters.

Soy milk can provide protein and is often fortified with nutrients such as calcium and vitamin D. Check the nutrition label because fortification varies between brands.
You can substitute another unsweetened plant milk if that’s what you have available.
🍎 Apple Cider Vinegar
You only need a small amount of apple cider vinegar, but it plays an important role in the recipe.
The acidity helps activate the baking soda, contributing to the muffins’ rise and texture.
Don’t worry—you won’t end up with muffins that taste like vinegar!
🌰 Walnuts – Optional
Walnuts are completely optional, but I love the little bit of crunch they add.
They provide plant-based protein, fiber, magnesium, copper, manganese, and unsaturated fats, including the plant-based omega-3 fatty acid ALA.
If you’re watching calories for weight loss, remember that nuts are nutrient-dense but also calorie-dense, so you can adjust the amount to fit your needs.
And if walnuts aren’t your thing, use your favorite nut instead!
🍇 Raisins – Optional
Raisins add little bursts of natural sweetness and chewy texture.

But remember that no single food causes weight loss. Your overall eating pattern, portions, total energy intake, activity, sleep, and consistency all matter.

WFPB Sweet Potato Muffins
Equipment
Ingredients
- 2 cup All Purpose Flour or Gluten Free 1-1 Blend
- ½ cup date sugar/date paste
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 tbsp pumpkin spice blend
- 1 cup sweet potato, baked and mashed
- 1 cup apple sauce
- 1 cup soy milk
- 1 tbsp apple cider vinegar
- ¼ cup walnuts(optional)
- ½ cup raisins(optional)
Instructions
- You will need to cook your sweet potato. I cook mine in the oven at 400 degrees F for 40-60 minutes depending on the size. This will make them naturally sweet and caramelized. You can boil, steam yours.
- Preheat your oven to 350 degrees F.
- Combine all dry ingredients in a large mixing bowl and whisk together.
- In a measuring cup, add your plant based milk and apple cider vinegar and set aside for 5 minutes to cruddle.
- After your sweet potato is cooked, allow to cool. Mine is already cooled because I precook mine at the beginning of the week. Using a fork or potato masher, mash your potato and add your wet ingredients until well combined.
- Prepare your muffin pan with reusable silicone liners or use a silicone muffin pan.
- Add the dry ingredients to the wet and gently combine. Add any add in at this time like nuts or dried fruit.
- Using your scoop, fill each one 3/4 full. Bake for 25 minutes until a toothpick comes out clean. Allow to cool.
