- 2 cups black beans, cooked
- 4 cups vegetable broth
- 1 onion, diced
- 1 carrot, diced
- 2 garlic cloves, minced
- 1 cup frozen corn
- 2 Tbsp Taco Seasoning
- ½ cup salsa
- 2 tbsp cilantro
- 1 avocado, sliced optional
- 1 fresh lime juice
Instructions
- Heat dutch oven to medium high and add a splash of vegetable broth or water. Add the onions, garlic and carrots to the pot and saute for 5 minutes. Continue to add water or broth to ensure it doesn't burn.
- Add the broth, beans, corn, salsa and seasoning and simmer for 15 minutes. Adjust seasoning and add salt and pepper if needed. Add a squeeze of lime before serving.
