Oil Free Vegan Zucchini Bread

- ⅓ cup unsweetened plant-based milk
- ½ cup applesauce(banana or pumpkin puree can be substituted)
- 1 tbsp ground flax seed
- ½ cup sucanat, date sugar or maple sugar
- 2 tsp pure vanilla extract
- 1 ½ cups all purpose flour, gluten 1-1 blend or oat flour
- 1 tsp lemon zest
- ½ tsp baking powder
- ½ tsp baking soda
- 2 tsp ground cinnamon
- ½ tsp ground allspice
- 1 cup grated zucchini(about 1 medium zucchini)
- ⅓ cup chopped walnuts or pecans
- ¼ cup rainsin(optional)
- 1 tsp salt(optional)
Instructions
- Preheat oven to 350 degrees F. Line an 8 x 4 inch non stick or silicone baking pan.
- In a large mixing bowl, combine the plant-based milk, applesauce, flaxseed and sweetener. Using handheld electric mixer, beat until creamy and smooth. Add vanilla and lemon zest.
- In a separate bowl, sift the flour, baking soda, baking powder, salt and spices. Mix the dry ingredients with the wet ingredient and combine until well incorporated.
- Fold in the zucchini, walnuts and raisins(if using). Pour batter into prepared loaf pan. Bake for 60-70 minutes or until the top is very firm and a toothpick comes out dry.
- Remove from oven and allow to cool for 10 minutes in pan and then remove from pan and allow to completely cooled before slicing and enjoying.
