Vegan Curried Fried Rice

- 1 medium white/red onion, chopped
- 2-3 cloves garlic, minced
- 4 cups cold cooked rice
- 1 rib celery, sliced
- ½ small carrot, diced
- 1-2 tbsp curry powder
- 3-4 tbps tamari or soy sauce
- 1 cup frozen peas, thawed
Instructions
- Heat large pan to medium high heat. Add a splash of water and saute onion, celery and carrots. Continue to add water to saute until they start to soften about 5 minutes.
- Add garlic and stir for 2 minutes. Add another splash of water and add the curry powder and saute to bloom the spice for about 1 minutes
- Add the rice and tamari and combine well. Cook for 3 minutes and add the thawed peas. Serve
