Vegan Butter Tofu

- 1-2 pkgs Extra Firm Tofu
- 2 tbsp cornstarch or arrowroot
- ½ tsp salt
Butter Sauce
- 1 small onion, diced
- 1 tbsp grated fresh ginger
- 1 tbsp garam masala
- 1 tsp curry powder
- 1 tsp coriander
- ¼ tsp cayenne pepper
- 1 tsp salt
- 3 oz tomato paste
- 1 can full fat or light coconut milk
Instructions
- Press the tofu. Use a tofu press or wrap your tofu in a dish cloth and put something heavy on it for 20 minutes.
- Preheat 400 degrees F. Line the baking sheet with either silpat or parchment paper.
- Slice the tofu in strips or just pull into chunks. Toss the tofu with a tablespoon of water and add cornstarch and salt and toss to coat.
- Spread on the prepared baking sheet even and bake for 25-30 minutes.
- While the tofu bakes, prepare the sauce. In a saucepan, use water to saute the onions for 3-4 minutes, then add ginger and garlic and cook for another minute or so.
- Add spices, salt, tomato paste and coconut milk. Stir until smooth and combined. Simmer for 5-10 minutes, stirring frequently.
- When the tofu done baking add it to the sauce and stir to coat the tofu.Serve over rice
