- 1 cup old fashion rolled oats
- ⅔ cup plant based milk (soy, almond or oat)
- 1 ripe banana
- 2 tbsp pure maple syrup
- ½ tsp cinnamon
- ⅛ tsp ground ginger
- ⅛ tsp ground clove
- pinch of nutmeg
- ½ tsp baking soda
- ½ cup grated carrots
Instructions
- Preheat your oven to 350 degrees F (180C)
- In you blender add all ingredients except the grated carrot.
- Blend on high until smooth. Add the grated carrot and pulse once to combine.
- Pour into your ramekins. Bake for 25 minutes until a toothpick comes out clean.
- Allow to cool for 5-10 minutes and add any toppings you make one, like whip cream, vegan vanilla ice cream and I think they are delicious just as they are.
- You can triple this recipe if you want to make a large 9 x 13 " pan
