This recipe has no eggs or dairy but don’t worry you won’t miss any of that. You will still get crispy outside and tender inside of your french toast.
What you need to make this
- pumpkin puree, not pie filling
- cornstarch will help with thicken the batter and allowing it to be crispy
- Bread, really any bread will do, I prefer sourdough, texas toast, whole wheat or Italian bread- Thick cut is great, so the batter can be absorbed

Vegan Pumpkin French Toast
Equipment
- 1 Griddle
Ingredients
- 1 ¼ cup unsweetened plant based milk
- ½ cup pumpkin puree(not pie filling)
- 2 tbsp cornstarch or arrowroot
- 1 tsp vanilla
- 2 tsp pumpkin spice blend or the following
- 1 tbsp brown sugar
- 8 slices favorite bread, sourdough or Texas toast or Italian works great
Pumpkin Spice Blend
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground ginger
Instructions
- In a shallow dish, whisk together plant based milk, pumpkin puree, cornstarch, brown sugar, vanilla and spice blend.
- Preheat non stick pan or griddle to medium high.
- Dip the bread on each side and add to your griddle. Cook for 3-4 minutes on each side until golden brown.
- Serve with pecans, pumpkin seeds, maple syrup and powdered sugar and vegan whipped cream or coconut whip
