Ingredients
  

  • 1 onion, diced
  • 2 ribs celery, diced
  • 2 carrots, peeled and diced
  • 5 small potatoes, chopped
  • 2 tsp granulated garlic or 2 cloves minced
  • 5 cups Vegetable stock
  • 1 15 oz tomato sauce
  • 1.5 cup 16 bean medley(pre cooked)
  • 2 cups cabbage chopped
  • 1 cup frozen vegetables
  • 1 tsp turmeric
  • 2 tsp thyme
  • 2 tsp oregano
  • 2 tsp Italian seasoning
  • 1 tbsp dried basil
  • 1 tsp ground black pepper

Instructions
 

  • Peel and chop your onions, celery and carrots.(save your peels for vegetable broth).
  • Turn on the saute function of your pressure cooker. Add a splash of water and then add your onions, celery and carrots. Saute for 5 minutes until they start to brown. Continue to add water to prevent burning.
  • Add in the potatoes, tomato sauce, vegetable broth, beans, cabbage. Sitr.
  • Turn off the saute feature and add in the spices and close pressure cooker and seal and cook on high for 10 minutes. Allow to naturally release.
  • Remove the lid and add any frozen vegetables you want to add(optional)
  • Give it a stir and adjust your seasoning if needed. Add fresh herbs at this time really elevates the flavor.
