  • 1 pkg frozen chopped spinach, thawed
  • ½ cup Trader Joes Garlic dip see alternative
  • 1 silken tofu(for alternative)
  • 2 tbsp nutritional yeast
  • 1 tsp ground black pepper
  • 1 tbsp Trader Joe's Ajika Seasoning blend
  • 12 large button or cremini mushrooms, cleaned and stemmed

Instructions
 

  • Preheat oven to 400 degrees F.
  • Clean mushrooms with damp cloth and remove stem. Place in oven safe dish with stem side up.
  • In a nut milk bag or cheesecloth ring out all excess water from the spinach.
  • Add to a medium bowl the remaining ingredients. Mix well.
  • Fill each stem area with the filling and bake until the mushrooms are tender and the spinach filling is hot, about 20 minutes.
  • If you are following the Starch Solution and looking for alternative to the garlic dip- Make your own with 1- 12 oz silken tofu, 1 tbsp lemon juice, 2 tsp apple cider vinegar, 2 tsp garlic powder, 1 tsp salt, 1 tsp white pepper, 2 tbsp nutritional yeast and 1 tsp white miso paste. Blend together in your blender and use 1/2 cup.
