In a glass container, add all ingredients except the carrots.
on a cutting board, cut carrots to the size of a hot dog and the length of the bun. Using your vegetable peeler, peel the carrots and slightly angle the ends.
Bring a pot with 2 cups of water to a boil and add the carrots. Allow to cook for about 15 minutes. You want the carrots slightly soft but still firm in the center.
Remove from heat and add the carrots to the marinade. Allow to stay in the marinade for at least 2 hours or overnight.
Preheat the grill or bbq, you want to cook and heat through. If using a grill allow to get char marks on your dogs.
We like our buns toasted and I love adding chili and cheese or ketchup, mustard and all the fixings.
