Plant Based Thousand Island Dressing

Ingredients
  

  • ½ cup raw cashews
  • ½ cup water
  • 5 tbsp ketchup
  • 1 tbsp fresh lemon juice
  • 1 tbsp raw finely diced white onion
  • ¼ tsp paprika
  • ¼ tsp dry mustard powder
  • ¼ tsp salt
  • 2 tbsp sweet pickle relish

Instructions
 

  • Add all ingredients to the vitamin or blender cup, except for 1 tablespoon of the sweet relish. Blender well until smooth.
    Add in the 1 tbsp sweet relish. Stir to combine.
  • This will thicken as it sits, just add 1 tbsp of water at a time to thin it out.
