  • Preheat oven to 350 degrees F. Prepare your loaf pan with parchment paper. Set aside.
  • In a large mixing bowl, combine the sweet potato, maple syrup, nut butter, applesauce and vanilla until smooth.
  • Add the cocoa powder, oat flour and salt until well combined.
  • Fold in the chocolate chips. Save a few for the top.
  • Pour the batter into your prepared loaf pan. Spread the batter evenly.
  • Bake the brownies for 26-28 minutes or until a toothpick comes out clean.
  • Allow brownies to complete cool in the loaf pan. Remove from pan and cut into squares.
  • Store in airtight container in the fridge for a week, if they last that long
