Ingredients
  

  • 1 30 oz frozen shredded potatoes, thawed
  • 1 12 oz frozen riced cauliflower, thawed
  • 1 12 oz frozen broccoli, thawed and cut into bite size pieces
  • 3 cups cheese sauce https://vicki-lynne.com/vegan-oil-free-cheese-sauce/
  • 2 tbsp taco seasoning
  • 1/2-3/4 cup salsa, hot, mild or medium(your preference

Instructions
 

  • Preheat oven 375 degrees F.
  • In a large bowl, add shredded potatoes, broccoli, cauliflower rice, taco seasoning and start with 1/2 cup of salsa. Add the cheese sauce and combine well. If you prefer this saucier add more salsa. There is no wrong way to make this.
  • Pour into baking dish and back for 35 minutes or until brown and bubbling.
  • Serve as side dish, breakfast or supper. This is a 50/50 plate if you follow the Starch Solution.
