In a pressure cooker, add the beans, water, onion, garlic and spices except the lime. Seal the pot and cook on 40 minutes.Allow to naturally release for 15 minutes or longer. Then release any pressure left in the cooker.
Transfer the beans to the high speed blender, add salt and about 1 cup of the bean water. Blend, you may need to use tamper to process. We like our refried beans smooth and creamy. If you like them thicker add less water to start.
You can use an immerse blender but I would strain out most of the water to start and slowly add back in. I find using a high speed blender gives the smoothest beans.
