Ingredients

  • 3 cups diced potatoes or left over mash potatoes
  • 2 tsp granulate garlic
  • 2 tbsp fresh parsley, chopped
  • ¼ cup plant based milk of leftover cooking liquid
  • 1-2 tbsp cornstarch(optional this will bind and make them crispy)

Instructions

  • If not using leftover potatoes, then peel and cook your potatoes until tender.
  • Drain, and mash the potatoes and add your favorite seasonings, I like garlic and parsley. Feel free to use your imagination, curry powder, cajun seasoning, onion powder etc.
  • Transfer the mashed potatoes into a square container and chill for at least 4 hours. Overnight is even better.
  • Preheat oven or air fryer to 400 degrees F.
  • Invert the potatoes onto a cutting board. Slice your set potatoes in long stick and put them on a baking sheet. Bake for 20 minutes in the oven or about 10 minutes in the air fryer. Enjoy!
