- 1/4-1/2 cup "No Chicken" broth
- ¼ cup unsweetened plant based milk
- 2 heads of roasted garlic
- Salt and Pepper to taste
- Parsley for garnish

With a sharp knife, cut the top of the garlic bulb off. Wrap each garlic head in tin foil. You can wrap the bulbs in parchment paper first if you prefer.Put in oven and allow to cook for 30-40 until they are roasted and soft. Peel potatoes, chopped and put in large pot. Cover with fresh water and 1 tsp of salt. Bring to a boil, cover and simmer until fork tender
Once the garlic is done, remove from oven and take foil off. Allow to cool for a few minutes so you can handle it.
Drain potatoes, mash adding broth, garlic and plant based milk. Start with 1/4 cup of broth and milk and add more broth as needed to get creamy consistency.
Garnish with chopped parsley and enjoy.
