Maple and Harissa Sweet Potato Casserole

1 mandoline
1 large knife
1 Large Bowl
1 measuring cups
tin foil
- 3 large sweet potatoes, washed
- 3 tbsp maple syrup
- 2 tbsp Harissa
- 2 tsp sea salt
- 4 garlic cloves, sliced
- ½ Sweet and Spicy Pecans
Preheat oven to 400 degrees F. Wash potatoes but don't peel.
Using a mandoline or very sharp knife, slice the sweet potatoes very thin.
In a glass or metal bowl mix the remaining ingredients (Harissa will stain plastic bowls etc) Toss the potatoes in the mixture until evenly coated.
In a 9 x 9 baking dish, arrange the sweet potato upright in a row.
Slice garlic and nestle in between the sweet potato slices. Cover with foil and bake for 30 minutes.
Remove the foil and sprinkle with pecans and bake another 20 minutes. Serve with fresh chopped parsley.
