Maple and Harissa Sweet Potato Casserole

Equipment

  • 1 9 x 9 baking dish
  • 1 mandoline
  • 1 large knife
  • 1 Large Bowl
  • 1 measuring cups
  • tin foil

Ingredients
  

  • 3 large sweet potatoes, washed
  • 3 tbsp maple syrup
  • 2 tbsp Harissa
  • 2 tsp sea salt
  • 4 garlic cloves, sliced
  • ½ Sweet and Spicy Pecans

Instructions
 

  • Preheat oven to 400 degrees F. Wash potatoes but don't peel.
  • Using a mandoline or very sharp knife, slice the sweet potatoes very thin.
  • In a glass or metal bowl mix the remaining ingredients (Harissa will stain plastic bowls etc) Toss the potatoes in the mixture until evenly coated.
  • In a 9 x 9 baking dish, arrange the sweet potato upright in a row.
  • Slice garlic and nestle in between the sweet potato slices. Cover with foil and bake for 30 minutes.
  • Remove the foil and sprinkle with pecans and bake another 20 minutes. Serve with fresh chopped parsley.
