How to Cook Chickpeas From Dry (Instant Pot, Stovetop & Slow Cooker Guide)

  • Rinse and check your chickpeas. Add them to your instant pot or pressure cooker. Cover with water and add salt.
  • Cook on high for 45-50 minutes. I usually cook for 46 minutes and then allow to release naturally for 10-15 minutes. If I'm using the chickpeas for hummus, I will cook them for 50 Plus minutes.
  • Allow to cool and then drain the chickpeas. Reserve the liquid which is aquafaba to use separately.
  • If you do want to soak your chickpeas soak them overnight with 1 tsp of baking soda, which helps them soften. Soak, drain and rinse and add the chickpeas into the instant pot and add fresh water and cook for 12-18 minutes.
