Healthy Plant Based Tofu Mayo

Ingredients
  

  • 1 12.3 oz Silken Tofu
  • 1-2 tbsp fresh lemon juice or apple cider vinegar
  • 1 tsp agave or date sugar
  • Salt and white pepper

Instructions
 

  • Drain silken tofu. Add to vitamix with remaining ingredients. Only add 1 tbsp of lemon juice to start. Blend until smooth. You can add a 1 tbsp of water if you need to thin it out to blend. Taste and if needed add remaining lemon juice.
  • Store in the fridge for 1 week. Use in your favorite sandwich or filling.

Feel free to add, sriracha, harissa or garlic to jazz this up.
