  • 1 bunch kale, cleaned and chopped into bite size pieces

  • 1 vegan bacon bits(optional)

Caesar Dressing

Instructions
 

  • First prep the vegan parmesan.
  • To prepare the dressing, presoak the cashews for 30 minutes in hot water.
  • While the cashews are soak, destem the kale and soak in salad spinner. Spin to dry and chop into bite size pieces.
  • In the high speed blender, add the dressing ingredients and blend until smooth.
  • Add kale to salad and toss with dressing and top with parmesan cheese. You can top with vegan bacon bits.
