Caesar Dressing

Instructions
First prep the vegan parmesan.
To prepare the dressing, presoak the cashews for 30 minutes in hot water.
While the cashews are soak, destem the kale and soak in salad spinner. Spin to dry and chop into bite size pieces.
In the high speed blender, add the dressing ingredients and blend until smooth.
Add kale to salad and toss with dressing and top with parmesan cheese. You can top with vegan bacon bits.
