Mash banana well so there are no lumps left, if you want a smooth pudding.
In a large pot, add the banana, milk and cornstarch and whisk together. Turn heat to medium high. Continue to whisk constantly as mixture thickens. Approximately 5 minutes. Remove from heat and add vanilla extract.
Pour into raminkens and chill for several hours or overnight.
To serve, add slices of banana and sprinkle with vegan sugar or coconut sugar and brulee. Enjoy
