Ingredients
  

  • 2 lbs potatoes, sliced thin
  • 2 tbsp nutritional yeast
  • 1 tsp garlic
  • 2 onions, peeled and sliced
  • 1 tsp bouillon cube or paste
  • 1 cup broccoli, fresh or frozen
  • 1.5 cups plant-based milk
  • 1.5 cups white beans
  • 1 tsp thyme
  • Salt and Pepper

Instructions
 

  • Preheat oven to 350 degrees F.
  • Clean and slice potatoes. In the baking dish, layer the potato slices, alternate with sliced onions and broccoli.
  • In a vitamix, add soy milk, bouillon, white beans, nutritional yeast, thyme, and salt and pepper. Blend until smooth.
  • Pour mixture over the potatoes, onions and broccoli. Bake for 50-60 minutes until the potatoes are tender.
