Instructions
Preheat oven to 350 degrees F.
Clean and slice potatoes. In the baking dish, layer the potato slices, alternate with sliced onions and broccoli.
In a vitamix, add soy milk, bouillon, white beans, nutritional yeast, thyme, and salt and pepper. Blend until smooth.
Pour mixture over the potatoes, onions and broccoli. Bake for 50-60 minutes until the potatoes are tender.
