In a large bowl, add the pitted dates. I use deglet because they are cheaper.
Add boiling water and soak for 30 minutes depending on how dry they are. Drain but reserve the soaking water.
Add dates to food processor and 1/4 cup of the reserved water. Process until a smooth, continue to add liquid until the consistency you prefer. More liquid more of a date syrup, less date paste.
Store in airtight container in fridge or 1 month in the freezer.
