Ingredients
  

Chermoula Sauce

  • 1 plum tomato
  • ¾ cup cilantro
  • 6 garlic cloves, minced
  • 1 zest of one lemon
  • juice of one lemon
  • 1 tbsp sweet paprika
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1/4-1/2 tsp cayenne powder

Stew

  • 1 medium onion, peeled and cut into half moons
  • 1 red bell pepper, cut in strips
  • 10 cremini mushrooms, sliced
  • 1 zucchini, halved and sliced into half moons
  • 2 cups chickpeas
  • Salt and Pepper to taste

Instructions
 

To make Chermoula Sauce

  • Combine all ingredients in food processor or high speed blender and process until smooth and creamy.
  • Set aside.

Vegetable Stew

  • Preheat dutch oven to medium high. Add onions, red pepper, and mushrooms in the pot. Saute for 8-10 minutes. Add 1-2 tablespoons at a time to ensure it doesn't burn.
  • Add zucchini, chickpeas, continue to cook for 10 minutes.
  • Add the chermoula sauce and cook for 5 minutes. Season with salt and pepper.
