Press the tofu. Use a tofu press or wrap your tofu in a dish cloth and put something heavy on it for 20 minutes.
Preheat 400 degrees F. Line the baking sheet with either silpat or parchment paper.
Slice the tofu in strips or just pull into chunks. Toss the tofu with a tablespoon of water and add cornstarch and salt and toss to coat.
Spread on the prepared baking sheet even and bake for 25-30 minutes.
While the tofu bakes, prepare the sauce. In a saucepan, use water to saute the onions for 3-4 minutes, then add ginger and garlic and cook for another minute or so.
Add spices, salt, tomato paste and coconut milk. Stir until smooth and combined. Simmer for 5-10 minutes, stirring frequently.
When the tofu done baking add it to the sauce and stir to coat the tofu.Serve over rice
